Flying Jakob

Flying Jakob (Flygande Jakob)

 

This is an old favorite among kids and grown ups. Quick to make on a week night, or if you have the time, cook the chicken yourself. The combination of flavors is amazing, and I think it works best with white rice, but pasta is another option. Enjoy!

Ingredients

  • 1 rotisserie chicken, or pan fry 4 chicken things with salt and pepper
  • 8 slices of bacon
  • 2 cups of heavy whipping cream
  • 4 tablespoons of chili sauce
  • 1 teaspoon curry
  • 2 bananas
  • 1/2 cup salted peanuts
  • Salt and pepper

Instructions

1. Preheat the oven to 400 degrees F.
2. Cut the chicken meat into bite sizes, or cook in a pan until cooked through. Place in the cut up chicken into an oven safe pan.

3. Cut the bacon into 1-inch bites and fry in a pan for about 8 minutes on medium heat. Drain and spread on top of the chicken.

4. Slice the bananas and place over the chicken and bacon.

5. Mix chili sauce, cream, curry and black pepper.

6. Pour over the chicken.

7. Bake for about 15-20 minutes.
8. Meanwhile, roast the peanuts in a dry pan for about 5 minutes, make sure not to burn them.

9. When the chicken is ready, add the peanuts on top. This recipe goes great with rice and a green salad.
