Onion Quiche

Onion Quiche (Lök Paj)

 

I love the mix of different onions in this quiche! I make my own crust but if you don’t feel like doing it or don’t have time, store bought ones work as well. Just make sure to have two of them if you are using this recipe. Serve with a green salad, and enjoy!

Ingredients

  • 20 ounces flour
  • 8 1/2 ounces butter
  • 2-3 tablespoons of water
  • 2 tablespoon butter
  • 1 red onion
  • 1 yellow onion
  • 4 cloves of garlic
  • 6 eggs
  • About 1 cup heavy cream
  • About 1 1/2 cups shredded Swiss cheese
  • Salt and pepper

Instructions

1. Pour the flour into a big bowl.
2. Slice up the butter and let it sit in room temperature for a while to soften it up.

3. Mix the flour and butter. Add water and turn into a dough. Press into form and let it rest in fridge for about 30 min.

4. Turn on the oven to 400 F degrees. Bake in the middle for about 10 min.
5. Chop up the onions and mince the garlic while the crust is baking.

6. Over medium-low heat melt butter in a large saucepan. Add onions and garlic and cook slowly, stirring occasionally, until onions are soft.

7. In a small bowl, beat together eggs and cream.

8. Spread onions in bottom of pastry shell.

9. Spread the cheese on top of the onions.

10. Pour egg mixture over onions. Bake in the oven for about 35 minutes.

Shrimp Quiche

Shrimp Quiche (Räk Paj)

 

I made this quiche for our annual Crayfish Party, and it was a big hit. You can make it the night before if you are planning on a party and have a lot of work to do the next day, and the leftovers are amazing. It’s nice and creamy, and should be served lukewarm and with a green salad.

Ingredients

  • 20 ounces flour
  • 8 1/2 ounces butter
  • 2-3 tablespoons of water
  • 1 1/2 pounds of shrimp
  • 13 1/2 ounces shredded cheese
  • 6 eggs
  • 13 1/2 ounces milk
  • 6 1/2 ounces heavy whipping cream
  • Salt & pepper
  • 6 tablespoons of dill

7. Whip eggs, milk, cream, salt, pepper and dill.

8. Add the shrimp to the quiche crust. Make sure to cover the whole bottom of the crust.

9. Spread out the cheese on top of the shrimp.

10. Pour the egg mixture over the shrimp and cheese.

11. Bake in oven for about 40 minutes until the crust is golden brown.

Swedish Pancakes

Swedish Pancakes (Svenska Pannkakor)

 

Everyone loves Swedish pancakes, and here is an easy recipe. You can serve it with jam, or if there’s a special occasion, ice cream! This recipe serves about 4 people but I usually double it and freeze the leftovers and serve to my kids at a later date.

Ingredients

  • 2 eggs
  • 1 1/4 cups flour (not self-raising)
  • 2 1/2 cups milk
  • 1 teaspoon salt
  • 3 tablespoons of butter (and some extra for frying)

Instructions

1. Mix eggs, flour and salt.
2. Add the milk, a little at the time, and whisk to a smooth batter. The batter will be very thin (almost like for crêpes).

3. Melt the butter in a skillet, then add to the batter.

4. The best way to cook the pancakes is in special pancake cast iron skillet, but if you don’t have one, a smaller skillet works just as well. In a hot skillet, add some butter, and make sure the skillet is covered with it.

5. Add enough batter to cover the bottom (turn the skillet around to spread the batter).

6. Fry the pancakes golden brown on both sides. Add more butter for each new pancake.

7. Roll or stack them on a serving plate. Keep warm.
8. Serve hot, preferably with whipped cream and jam, or as here, with ice cream!

Crayfish

Crayfish Boil

 

It’s August and now is the time for Crayfish parties! Some people buy them fresh, some frozen, we buy them live and boil them ourselves. Here is a step-by-step recipe that serves 6 so you might want double or even triple the recipe.

Ingredients

  • 5 pounds live crayfish
  • 1 large bunch of dill crowns (flower heads)
  • 1 12 ounces bottle dark beer, porter or stout
  • 5 pints water
  • 1 cup sea salt

Instructions

1. Make sure you cook the crayfish within hours of buying them to prevent too many of them dying.

2. Set aside some of the best looking dill crowns to use as a garnish. Put the rest in a large bucket, large enough to take all the crayfish and beer.

3. Put the water and salt in a large pot and bring to the boil.

4. Drop the crayfish into the boiling water. Cover the pot, return to the boil and cook for about 8 minutes, until the crayfish turn a bright orange/red color.

5. Remove the crayfish from the water with a slotted spoon and place in the bucket with the dill crowns and beer.
6. Repeat with the remaining crayfish until they are all cooked.

7. When you have finished cooking the crayfish, carefully pour the hot cooking liquid into the bucket and allow to cool.

8. When cold, transfer the crayfish, dill crowns and all the marinating liquid to containers to fit in your fridge. Leave the crayfish in the fridge overnight (or if using later, freeze them).

9. When you are ready to serve the crayfish, remove them from the marinade, drain and stack them on serving plates. Garnish with the reserved dill crowns.
