Patties with Onion Gravy (Pannbiff med löksky)

 

Mmmmm, pannbiff… I forgot how good this simple dish is! Pretty quick to make and no hassle. I serve it with boiled potatoes and cooked carrots sprinkled with dill. Enjoy!

Ingredients for the Patties

  • 1 pound ground beef
  • 1 egg
  • 1/2 cup of bread crumbs
  • 1/2 cup of milk
  • Salt, pepper, and white pepper to taste
  • Butter

Ingredients for the Gravy

  • 2 yellow onions
  • 2 tablespoons of butter
  • 2 teaspoons of sugar
  • 1 tablespoon of flour
  • 2 cups of beef broth
  • Salt and pepper to taste

Instructions

1. Soak the bread crumbs in the milk and let it sit for about 10 minutes.

2. Preheat the oven to 380 degrees F. Add the egg to the bread crumb mixture, along with the ground beef and spices.

3. Mix well and shape the mixture into small patties, about the size of sliders.

4. Sear in the butter on medium high heat until the outside is golden brown. Then put in an oven safe pan, cover with foil, and cook in the oven until cooked through. Turn the heat down to warm once that is done.

5. Meanwhile, make the onion gravy. Slice the onions thin and cook in the butter until browned. I like to cook them in the remaining juices from the patties for extra flavor.

6. Add the sugar to caramelize the onions. Then add the flour and the beef broth. Whisk real well and let it boil for a few minutes. Add salt and pepper to taste.

Rosemary Pork Tenderloin

Rosemary Pork Tenderloin with Raspberry Salad (Rosmarin fläskfile med hallon sallad)

 

This was such a perfect Saturday dinner idea! Pretty easy to make and filled with different kinds of flavors. I served the pork with Hasselbacks potatoes which takes some time to make but are so worth it!

Ingredients

  • Pork tenderloin
  • 1 sprig fresh rosemary
  • 2 tablespoons of your favorite steak spice mix
  • Butter for searing
  • Arugula salad mix
  • 1 cup raspberries
  • 1-2 ounces of goat cheese
  • 1/3 of a red onion
  • 1/2 cup of almonds
  • Balsamic vinaigrette

Instructions

1. Chop the rosemary and combine with the rest of the spices in a zip lock bag big enough for the pork tenderloin.

2. Trim the biggest pieces of fat off the pork.

3. Put the pork in the zip lock bag and shake until the whole piece is covered in the spice mix. Let it marinade for a few hours.

4. Meanwhile, make the salad by combining the arugula, the raspberries, thinly sliced onion, crumbled goat cheese and chopped up almonds. Let the salad rest in the fridge while you make the pork. Add the dressing right before you serve.

5. Add butter to a frying pan and heat up medium high. Put the pork in the pan.

6. Sear it on high heat until browned all over. Turn down the heat and cook until cooked through.

Curry Chicken

Curry Chicken (Linas Kyckling)

 

This is a quick dish that most will like. I used to make it a lot when I lived in Sweden, and just ‘remembered’ it. We had it last night and a big hit with my husband! Serves about 4, and it’s very refreshing served with a green salad on the side.

Ingredients

  • 3 grilled or oven roasted chicken thighs
  • 6 medium mushrooms
  • 2 cups cooked rice
  • 2 bags Cafe de Paris gravy (or if you can’t find it in the specialty stores here, use Bearnaise sauce and simply add a pinch or two of curry powder and some tarragon)
  • Your favorite shredded cheese, about a cup or so

Instructions

1. Grill or roast the chicken until cooked through. Remove from oven and let it cool down. Cut up into bite sized pieces and put to the side.

2. Wash and slice or chop up the mushrooms.

3. Cook the mushrooms in a pan with some oil, salt and pepper.

4. Cook the rice and let it cool down slightly. Transfer to an oven safe dish.

5. Add the mushrooms and chicken on top of the rice.

6. Meanwhile, make the gravy. If you can’t find this gravy here in the States, use the bags of Bearnaise sauce instead.

7. Pour the gravy over the chicken, make sure you cover all of it.

8. Top with cheese. Bake in the oven for about 15 minutes at about 405 degrees F.

9. Bake until golden brown on top. Remove and let it cool down slightly before serving.

Spaghetti Sauce

Spaghetti Sauce (Köttfärs Sås)

 

It’s almost Fall and time for comfort food! This is a favorite amongst the whole family. I usually make a big batch like this recipe here, and then freeze in Tupperware. Serve with spaghetti of your choice and a green salad.

Ingredients

  • 6-7 carrots
  • 1 cup mushrooms
  • 2 medium onions
  • 5 minced garlic cloves
  • 1 cup milk
  • 1 cup chicken stock
  • 3 pounds of ground beef
  • 12 ounces tomato paste
  • 1/2 cup cream
  • Salt and pepper
  • 3 cups tomato sauce
  • 1 cup water
  • Oregano, white pepper, and cumin to taste

Instructions

1. Start by peeling and chopping up the carrots, about 1/4 of an inch thick.

2. Peel and chop up the onions.

3. Slice and chop the mushrooms.

4. Add the carrots in a frying pan and cook on medium heat for about 5 minutes. Then add the milk and cream. Bring to a boil and cook for about 7 minutes.

5. Add the onions, garlic and mushrooms, salt and pepper. Let it boil until the milk is absorbed into the vegetable mixture. Pour the mixture into a large crock pot.

6. Add the meat in the same frying pan, and cook until browned.

7. I like to drain the meat after it cooked to get rid of extra grease. A colander works great for that.

8. Add the meat to the vegetable mix, along with the tomato sauce (for this recipe I made my own sauce out of tomatoes and basil from my garden). Mix well.

9. Let it cook on high for 2 hours, then on low heat for another 2-3 hours. During this time, keep seasoning the sauce with your favorite spices. I always mix it up, all depending on what I have at home.
