Pork Chops with Apples & Potatoes (Kotletter med äpplen & potatis)

 

The combination of apples and potatoes, spinach and feta is the amazing in this Fall appropriate recipe. Pork chops is a great meat option but chicken or a good steak would real good as well.

Ingredients

  • 1 jalapeno
  • 3 medium sized potatoes
  • 2-3 tablespoons of butter
  • 1 large apple
  • Cinnamon
  • Half a bag of fresh spinach
  • 1/2 cup of cubed Feta cheese
  • Juice from 1 lemon
  • 2-3 pork chops
  • Fresh rosemary
  • Salt and pepper to taste

Instructions

1. Slice the jalapeno and potatoes thinly. Fry in some of the butter on medium heat until soft and tender. Add salt and pepper to taste. Transfer to an oven safe dish when done.

2. Slice the apple and cook in the butter on low heat until somewhat tender. Sprinkle with cinnamon.

3. Place on top of the potatoes and keep warm in the oven while you make the rest.

4. Season the pork chops with salt and pepper and some fresh rosemary. Fry on medium high heat until cooked through and browned on the outside. Keep warm in the pan or in the oven.

5. Meanwhile, steam the spinach quickly. Drain and add lemon juice.

6. Divide the cooked spinach and feta cheese on 2 plates. Add the potatoes and apples, as well as the pork chop. Enjoy!

Pinapple Ham with Rice

Pinapple Ham with Rice (Skinka med ananas)

 

This is a quick weeknight fix that is appreciated by the whole family! I like to serve this with rice and steamed veggies such as carrots and broccoli. I also recommend some sweet chili sauce for the rice, very good!

Ingredients

  • Cooked ham of your choice
  • Basil
  • Crushed red pepper flakes
  • Pineapple tidbits
  • Sliced cheese of your choice

Instructions

1. Preheat oven to about 380 degrees F. Place the ham slices on a baking sheet. If the ham isn’t pre-sliced, please slice about 1/4 of an inch thick. Divide the basil, pepper flakes, and pineapple atop the ham slices.

2. Top with a slice of cheese on each piece of ham.

3. Bake in the oven. Keep an eye on the cheese throughout, and make sure it starts to bubble a bit.

4. Remove when the cheese is somewhat brown, about 20 minutes.

Swedish Beef Stew

Swedish Beef Stew (Kalops)

 

I love Fall and comfort food! This stew takes a while, but it’s easy to make and so worth the wait. You can either cook it in a large dutch oven or do what I do, use a crock pot. That way you don’t have to monitor for over 4 hours. Enjoy!

Ingredients

  • 2 pounds of stew beef, cubed
  • 6 medium potatoes, peeled and cubed
  • 2 yellow onions, cut into wedges
  • 3 large carrots, peeled and sliced
  • 3 tablespoons butter
  • 4 tablespoons all purpose flour
  • 4 cups water
  • 1 tablespoon ground allspice
  • Salt, white pepper and black pepper to taste

Instructions

1. Melt the butter in a dutch oven or a large frying pan. Over medium high heat, brown the meat well for about 5 minutes and then sprinkle with the flour and stir to combine well.

2. Remove the beef and put in a large crock pot or slow cooker.
3. Add the onions to pan you used to cook the meat in. Cook for 5 minutes while scrapping up brown bits.

4. Add the carrots to the onions along with some water and cook for about 5-10 minutes.

5. Add the carrots and the onions to the beef in the crock pot along with the water and spices to taste. Cook on low for about 3-4 hours. Then add the potatoes and cook for another hour or until soft and tender.
