Autumn Casserole

Autumn Casserole (Höst gryta med fläskfilé)

 

This is the perfect weekend dish. Quick to make but very rich in flavors and sure to be a big hit. Double the recipe if you are having a dinner party. Serve with rice and a hearty salad.

Ingredients

  • 1 pound pork tenderloin
  • 1/2 pound bacon
  • About 10 mushrooms
  • 1 red onion
  • 2 tablespoons of butter
  • 1 cup crème fraiche
  • 1 1/2 cup of heavy whipping cream
  • 2 tablespoons of soy sauce
  • 2 tablespoon of chili sauce
  • 3-4 teaspoons of sambal oelek
  • Salt, peppar, and tarragon

Instructions

1. Sear the pork tenderloin on high heat until browned on the outside. Then lower the temperature and cook until almost cooked through. Remove from pan and slice.

2. Chop up the bacon. Dice the onion. Cut the mushrooms in half. Fry in the same pan until tender. Remove and put both the pork and mix in a large dutch oven.

3. Make the sauce by combining the crème fraiche, heavy whipping cream, soy sauce, chili sauce, and sambal oelek. Cook for about 5 minutes on low heat.

4. Combine the sauce with the rest in the dutch oven and cook on low heat for about 10 minutes. Taste with salt, pepper and tarragon.

Fish Casserole

Fish Casserole (Fiskgratäng)

 

I love this dish, such a classic! The dill sauce is what makes it! Kids and adults are sure to love it. Serve with veggies of your choice. Enjoy!

Ingredients

  • 1 pound cod
  • Salt and white pepper

Mashed Potatoes

  • 1 1/2 pounds potatoes
  • 1/2 cup of milk
  • 2 tablespoons butter
  • Salt and white pepper
  • 1 egg yolk

Sauce

  • The juices from the cooked fish
  • 2 cups of heavy cream
  • 2 tablespoons of flour
  • Juice from 1 lemon
  • 3 tablespoons dill
  • Salt and white pepper

Instructions

1. Preheat the oven to 430 degrees F. Cut up the cod into bite size pieces and place in an oven safe dish. Add salt and white pepper and cover with foil.

2. Bake the fish for about 15 minutes. When done, move the fish to another plate and pour the juices into a pot. Add the heavy cream and flour. Whisk and bring to a boil. Let it cook for 3 minutes while stirring. Add the lemon juice, dill salt and white pepper.

3. Place the fish back in the baking dish and pour the sauce over the fish.

4. Peel and cut the potatoes into 2-inch thick pieces. Boil on medium low heat for about 15 minutes. Drain and add the milk, butter and spices. I use a Cuisine Art to mix the potatoes but a regular masher will work as well. Add the egg yolk last and mix until smooth.
5. Spread the mashed potatoes around the fish, along the edges of the baking dish, and bake for about 15-20 minutes until the tips of the potatoes come out somewhat brown.
