Stuffed Pork Tenderloin

Stuffed Pork Tenderloin with Roasted Veggies (Fylld fläskfilé med rostade grönsaker)

 

Fun and festive weekend dinner for you and your family! Many of the ingredients here can be substituted for other herbs and veggies. Enjoy!

Ingredients

  • Chopped fresh parsley
  • 2 teaspoons of horseradish
  • 3 1/2 ounces of cream cheese
  • 2 pounds of pork tenderloin
  • 1 pound of potatoes
  • 1 red onion
  • 2 medium sized parsnips
  • 1 cup fresh spinach
  • Salt, pepper and olive oil

Instructions

1. Mix the chopped parsley with the horseradish and cream cheese. Salt and pepper to taste.

2. Slice the pork lengthwise so you have a rectangular shaped sized piece of pork. Pound it until thin and tender. Spread the cream cheese mixture on top. Roll up and secure the ends with toothpicks.

3. Heat up some olive oil in a pan and fry until golden brown on the outside.

4. Preheat the oven to 425 degrees F. Peel and cut the potatoes into bite size pieces. Do the same with the parsnips. Slice the red onion into chunks. Mix the potatoes with olive oil and salt and pepper and put in an oven safe dish. Bake for 10 minutes then add the rest of the veggies.

5. Bake for another 15 minutes and add the stuffed pork to the oven as well. Remove when the veggies are soft and the meat cooked through. Add spinach to the veggies and let sit while the meat rests for about 5 minutes.

6. Slice the meat and serve with the veggies.

Breaded Pork with Braised Potatoes

Breaded Pork with Braised Potatoes (Fläskkotletter och potatis)

 

Yum! Very quick and very easy to make. And loved by all ages!

Ingredients

  • 1 lb peeled baby potatoes
  • 4 thin pork chops
  • 1 cup bread crumbs
  • Salt and pepper
  • 2 eggs
  • 1 stick of butter
  • 1 lemon
  • Capers

Instructions

1. Boil the potatoes until tender. Drain and set aside.

2. Beat each of the pork chops flat with a meat mallet.

3. Spread the bread crumbs on a plate and season with salt and pepper. Beat the eggs in a bowl. Dip each of the pork chops in the egg mixture and then the bread crumbs.

4. Melt half of the butter in a frying pan. Add the pork chops and cook for about 3 minutes per side. Remove when done and keep warm.

5. Add the remaining butter to the pan, and add the potatoes. Stir gently to coat and season with pepper.

6. Arrange the pork chops and potatoes on plates. Top with lemons and capers.

Meatballs in Curry Sauce

Meatballs in Curry Sauce (Köttbullar i currysås)

 

This was a major hit with my husband! The curry adds a bit of spice to the dish while the apples and rice makes it a bit more kid friendly. A hit for all ages! I use ground turkey in this recipe but you can also use ground beef or pork, totally up to you. And just a side note, meatballs in Danish are called Frikadeller!

Ingredients for Meatballs

  • 1 lb ground turkey
  • 2 crushed garlic cloves
  • 1/2 cup of milk
  • 4 tablespoons plain flour
  • 1-2 tablespoons of curry powder
  • Salt and pepper
  • 2 eggs

Ingredients for Sauce

  • 1/2 stick of butter
  • 1 chopped onion
  • 2 minced garlic cloves
  • 2 tablespoons of curry powder
  • 2 tablespoons of plain flour
  • 1 cup of heavy cream
  • 2 peeled and sliced carrots
  • 1 cored and sliced apple

Instructions

1. Combine the turkey and garlic. Add the milk, flour, curry powder, salt and pepper. Mix it all together. Add the eggs and mix until the mixture is as light and fluffy as possible.

2. Boil water in a big pot and add some salt. Meanwhile, shape the ground turkey mixture into small balls and drop into the boiling water. Let them simmer for 20 minutes.

3. Remove the meatballs with a skimmer and place on a tray. Reserve about 4 cups of the broth.

4. In a pot, melt the butter and add onions, garlic, and curry powder. Cook for a few minutes. Add flour and stir well. Add 1 cup of the broth and stir until smooth. Pour in the rest of the broth and bring to a simmer.

5. Add the cream and bring to a boil. Reduce heat a bit and add the carrots and simmer for about 10 minutes. Add the meatballs and cook for a few minutes. The add the apple slices and cook for 3 minutes. Season with salt and pepper.
