Salmon and Potato Patties

Salmon with Potato Patties (Lax med potatis pannkaka)

 

I had some leftover mashed potatoes the other day and decided to make potato patties with them. I served this with baked salmon, garlic dip and a good beet salad. Very good!

Ingredients

  • 1 lb of salmon
  • Leftover mashed potatoes
  • 1 jalapeno, sliced
  • 2 tablespoons of chopped up dill
  • 1 egg
  • 1 cup breadcrumbs
  • Lemon pepper, salt and pepper
  • Veggie oil
  • 1 cup of sour-cream
  • 1 garlic clove

Instructions

1. Combine the mashed potatoes, jalapeno, dill and egg.

2. Mix until smooth.

3. Roll into balls and flatten with your hand.

4. Dipp in breadcrumbs and cover both sides. Shake off the excess.

5. Season the salmon with the lemon pepper and bake at 400 degrees F for about 15-20 minutes.

6. Make the dip by combining sour-cream, minced garlic and pepper.

7. Fry the potato patties in oil until golden brown on both sides.

Sausage and Mashed Potatoes

Sausage with Mashed Potatoes (Korv med mos)

 

A classic! In Sweden you can by this in your local kiosk, a small open-fronted hut or cubicle from which newspapers, refreshments, tickets, etc., are sold. This is a quick dinner loved by the whole family!

Ingredients

  • Your favorite sausage
  • 8 medium potatoes
  • 1/2 cup of milk
  • 1 stick of butter
  • 1 yellow onion
  • Salt and pepper
  • Mustard
  • Ketchup

Instructions

1. Boil the poatoes until tender.

2. Slice the onion thinly and fry until very soft.

3. Drain the potatoes and add the milk and butter. Mash until soft and creamy. Season with salt and pepper. Keep warm in the oven while cooking the sausage.

4. Fry the sausage until golden brown.

5. Serve the mash with sausage and the fried onion along with mustard and ketchup.

Fried Cod

Fried Cod with Egg Salad (Torsk med äggsallad)

 

Mmmmm, very tasty! You can use any white fish for this recipe, and instead of roasting the potatoes you can just boil them. An easy and fairly quick, yet fancier recipe perfect for a weekend night. Enjoy!

Ingredients

  • 2 cod fillets
  • 4 boiled and chopped eggs
  • 1 cup cooked and chopped up shrimp
  • Dill
  • 1 stick of butter
  • Paprika
  • Salt and pepper
  • 1/2 pound of potatoes
  • Horseradish

Instructions

1. Boil the potatoes for about 12 minutes.

2. Mix shrimp and eggs.

3. Mix in a few tablespoons of horseradish and dill.

4. Drain the potatoes and place in an oven safe dish along with some veggie oil and salt and pepper. Roast for about 20 minutes at 425 degrees F.

5. Shape the egg salad into small rounds and place on plates.

6. Season the cod with salt and pepper and fry until golden on each side.

7. Melt the butter until golden brown, almost burnt.

8. Serve the cod with potatoes, egg salad, a side veggie, and the melted butter.

Potato Pancake

Potato Pancake (Raggmunk)

 

I haven’t had these pancakes since I was a kid, but they sure are tasty! And very easy to make. If you don’t want to shred the potatoes yourself, you can buy frozen hash-browns and defrost them. Enjoy!

Ingredients

  • 1 1/2 pounds of potatoes
  • 1 cup of flour
  • 1/2 teaspoon of baking powder
  • Salt and pepper to taste
  • 1 1/2 cups of milk
  • 3 tablespoons onions, grated
  • 2 eggs
  • Lingonberry jam (can be found at Scandinavian Specialty stores)

Instructions

1. Peel, rinse and grate the potatoes into a bowl of very cold water.

2. Whisk together flour, baking powder, salt, pepper and one cup of the milk to make a smooth batter.

3. Add the grated onion, eggs and remaining milk. Whisk until combined.

4. Drain the potato shreds in a wire mesh strainer or colander and using your hands, press as much moisture out as possible. Cover with a paper towel and set aside.

5. Stir the potato shreds into the batter.

6. Heat griddle or large frying pan to about 350°F and rub the griddle with a thin coat of oil. When the oil is hot, pour 1/4 cupfuls of batter onto the griddle and cook until golden on the bottom. Then flip the pancakes.

7. Meanwhile, fry up some thick bacon.

8. Serve the potato pancakes with the bacon and lingonberry jam.

Cinnamon and Chocolate Raspberry Twists

Cinnamon and Chocolate Twists (Kanel och choklad längder)

 

These baked twists are quite common in any Scandinavian bakery. I used puff pastry dough in this recipe instead of a regular dough, so much easier and quicker. You can try any sort of fillings for these as well. Yum!

Ingredients in the Chocolate Twist

  • 1 sheet of puff pastry
  • 1 block of chocolate, preferably milk chocolate
  • Raspberry jam
  • 1 egg, beaten
  • A few almonds, chopped up

Ingredients in the Cinnamon Twist

  • 1 sheet of puff pastry
  • 1 stick of butter
  • 1 tablespoon of cinnamon
  • 1 tablespoon of sugar
  • 1 egg, beaten
  • A few almonds, chopped up

Instructions for the Chocolate Twist

1. Unfold the puff pastry sheet. Place the chocolate bar in the middle and cut the dough as per the picture below.

2. Remove the top strands of puff pastry.

3. Spread raspberry jam on top of the choclate.

4. Fold the top part of the puff pastry sheet over the chocolate.

5. Braid the strands of dough until you reach the last ones which you need to remove.

Instructions for the Cinnamon Twist

1. Unfold the puff pastry sheet. Mix the butter, cinnamon and sugar in a bowl.

2. Spread the butter mix in the middle of the dough.

3. Remove the top strands of puff pastry. Fold the top part of the puff pastry sheet over the chocolate.

4. Braid just like you did with the chocolate twist.

5. Brush the twist with the beaten eggs.

6. Spread the almonds on top of each twists.

7. Bake at 450 degrees F for about 15 to 20 minutes. Please check on them every once in a while so they don’t burn.
