Steak with Chanterelles

Steak with Chanterelles (Stek med kantareller)

 

I was so happy to find chanterelles in the store and the combination of them, the steak and baked potato was perfect! Serve the baked potato with your favorite topping such as butter or sour cream. Enjoy!

Ingredients

  • 1/2 pound of chanterelles
  • Butter
  • Juice from 1 lemon
  • Your favorite steaks
  • Salt and pepper
  • 2 large potatoes
  • Your favorite toppings for the baked potatoes

Instructions

1. Rinse the chanterelles.

2. Trim and cut in half.

3. Salt and pepper the steaks.

4. Wrap the potatoes in foil and bake at 400 degrees F until cooked through, about 40 minutes.

5. Grill the steaks on high for a few minutes on each side and then lower the heat and cook until medium well done.

6. Saute the chanterelles in butter, lemon juice and salt and pepper for taste.

7. Remove the steaks from the BBQ and let them rest for a few minutes.

9. Serve the steak with the chanterelles and baked potato.

Sailors Beef

Sailor’s Beef (Sjömansbiff)

 

This amazing beef stew is made with beer, beef, yellow onions and potatoes. The whole thing is very tasty, and perfect for a cold Winter’s night. Serve with cucumber salad.

Ingredients

  • 2 1/2 yellow onions
  • 3 tablespoons butter
  • 1 pound of beef steak
  • 1/3 cup flour
  • 2 tablespoons butter
  • 2 pounds potatoes
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 1/2 cups of beef bullion
  • 1 1/2 cups dark beer

Instructions

1. Chop the onion and fry in a pan with 3 tablespoons of butter until golden in color. Put aside.

2. Cut the meat in pieces about ½-inch thick. Then pound to get it a bit tender.

3. Mix, flour, salt, and pepper in a bowl and add the meat. Mix evenly.

4. Fry the meat on both sides in a hot pan with 2 tablespoons butter. About ½ a minute on each side.

5. Peel the potatoes and cut them in thin slices.

6. Mix potato, fried onion, meat, bay leaves and thyme in a pot. Potatoes should be at the bottom and the top.

7. Mix the beef bullion and beer and then pour over the potato mix. Cover with a lid and simmer for about an hour. And here it is!

Parmesan Potatoes and Steak

Parmesan Potatoes and Steak (Parmesan potatis och stek)

 

I love potatoes and think these are a fun little treat for a nice steak dinner. I served it with sauteed mushrooms. Yum!

Ingredients

  • 3 tablespoons of melted butter
  • 1 ounce Parmesan cheese
  • Garlic powder or garlic cloves according to taste
  • 1 teaspoon of thyme
  • Salt and pepper according to taste
  • 6 medium potatoes
  • One cup of sliced mushrooms
  • Your favorite steak
  • Your favorite spices

Instructions

1. Preheat the oven to 375 degrees F and slice the potatoes into thin chips.

2. Place the potato slices in a large bowl, add the butter, Parmesan, thyme, garlic, salt and pepper. Mix it well.

3. Grease a muffin tray with some butter or vegetable oil. Put the potato slices in the tray so that their tops are slightly above the edges of it. Then sprinkle with pepper. Bake in the oven for about an hour.

4. Meanwhile, slice the mushrooms and cook on low to medium heat with garlic and your favorite spices. I used tarragon and black pepper.

5. Pepper and salt your choice of steak and either grill or cook in a pan. I used Kobe beef steaks which is my favorite.

6. Remove the potatoes from the oven and let them rest for about five minutes. Then sprinkle with rosemary and some Parmesan cheese.

Beef Rolls with Cream Sauce

Beef Rolls with Cream Sauce (Oxrullader i Gräddsås)

 

Easy yet a bit of a fancy dish. Perfect for a family weekend dinner or when you have friends over. Mashed potatoes can be substituted for boiled or roasted potatoes. Enjoy!

Ingredients

  • 1 pound of thin beef eye of round steak
  • 10 baby carrots
  • 1/2 yellow onion
  • 2 tablespoons Dijon mustard
  • 3-4 slices of bacon
  • 3 tanlespoons of beef broth
  • 4 cups of water
  • 2 tablespoons of tomato paste
  • 1 pound of potatoes
  • Butter and milk
  • Salt and pepper

Instructions

1. Start by peeling the potatoes and quarter them. Put in a pot, add water and bring to a boil. Cook until tender. Drain, and mash with milk and butter and salt and pepper to taste. Pour the mashed potatoes into an oven proof dish and bake in oven at 380 degrees F for about 30 min.

2. Pound the beef and spread some Dijon mustard on top.

3. Place half a slice of bacon on each piece of beef. Cut the carrots in half lengthwise and slice the onion. Place on one side of the bacon.

4. Roll up the beef and secure with toothpicks. Fry with some oil about 1 minute per side, just to get the sides brown.

5. Bring the broth to a boil in the water along with the tomato paste. Boil the rolled beef pieces on medium heat for about 25 min. Drain once the carrots are tender.

6. Take out the baked mashed potatoes and serve with the rolled beef, green beans, lingonberries. For this recipe I used one Cream Sauce bag from Ikea, easy to make and very tasty!

Swedish Beef Stew

Swedish Beef Stew (Kalops)

 

I love Fall and comfort food! This stew takes a while, but it’s easy to make and so worth the wait. You can either cook it in a large dutch oven or do what I do, use a crock pot. That way you don’t have to monitor for over 4 hours. Enjoy!

Ingredients

  • 2 pounds of stew beef, cubed
  • 6 medium potatoes, peeled and cubed
  • 2 yellow onions, cut into wedges
  • 3 large carrots, peeled and sliced
  • 3 tablespoons butter
  • 4 tablespoons all purpose flour
  • 4 cups water
  • 1 tablespoon ground allspice
  • Salt, white pepper and black pepper to taste

Instructions

1. Melt the butter in a dutch oven or a large frying pan. Over medium high heat, brown the meat well for about 5 minutes and then sprinkle with the flour and stir to combine well.

2. Remove the beef and put in a large crock pot or slow cooker.
3. Add the onions to pan you used to cook the meat in. Cook for 5 minutes while scrapping up brown bits.

4. Add the carrots to the onions along with some water and cook for about 5-10 minutes.

5. Add the carrots and the onions to the beef in the crock pot along with the water and spices to taste. Cook on low for about 3-4 hours. Then add the potatoes and cook for another hour or until soft and tender.
