Steak with Chanterelles

Steak with Chanterelles (Stek med kantareller)

 

I was so happy to find chanterelles in the store and the combination of them, the steak and baked potato was perfect! Serve the baked potato with your favorite topping such as butter or sour cream. Enjoy!

Ingredients

  • 1/2 pound of chanterelles
  • Butter
  • Juice from 1 lemon
  • Your favorite steaks
  • Salt and pepper
  • 2 large potatoes
  • Your favorite toppings for the baked potatoes

Instructions

1. Rinse the chanterelles.

2. Trim and cut in half.

3. Salt and pepper the steaks.

4. Wrap the potatoes in foil and bake at 400 degrees F until cooked through, about 40 minutes.

5. Grill the steaks on high for a few minutes on each side and then lower the heat and cook until medium well done.

6. Saute the chanterelles in butter, lemon juice and salt and pepper for taste.

7. Remove the steaks from the BBQ and let them rest for a few minutes.

9. Serve the steak with the chanterelles and baked potato.

Salmon Skewers

Salmon Skewers (Lax grillspett)

 

Grilled salmon is the prefect summer dish! Easy to make and can be served with several different vegetables or salads. Enjoy!

Ingredients

  • 1/2 pound salmon fillet or steaks
  • Fresh rosemary
  • Oil for fish, potatoes and dressing
  • Black pepper
  • 1/2 pound baby potatoes
  • Salt
  • 1/2 cup of parsley
  • 1 lemon
  • 1 cup plain yogurt
  • Your favorite herbs

Instructions

1. Mix a few tablespoons of oil with the chopped rosemary and black pepper.

2. Cut the salmon into bite sized cubes.

3. Marinate the salmon in the oil mixture for about 30 minutes.

4. Pre heat oven to 420 F degrees. Wash the potatoes and place in an oven safe dish. Sprinkle with oil and salt. Bake in the oven until tender, about 25-30 minutes.

5. Meanwhile, mix the yogurt with the chopped parsley and the juice and peel skin from the lemon. Once potatoes are done, sprinkle the mixture over.

6. Make the yogurt dressing by combing yogurt and your favorite chopped up herbs.

7. Thread the salmon onto the skewers.

8. Grill on medium high for a few minutes on each side.

9. Serve with the potatoes, dressing and a good vegetable.

Biff a la Lindstrom

Biff àla Lindstrom

 

An old classic! The beets are an amazing addition to the patties, definitely a different take. I served this with some homemade pickles – perfect!

Ingredients

  • 1 pound of ground beef
  • 1/2 cup of milk
  • 4 tablespoons of bread crumbs
  • 1/2 onion, chopped
  • 1/2 cup diced beets
  • 1 egg yolk
  • 2 tablespoons of HP sauce
  • Salt and pepper
  • 3 tablespoons of butter
  • 1/2 cup of chopped parsley
  • 4 eggs
  • 2 large baking potatoes, diced
  • 6 tablespoons of butter

Instructions

1. Mix the milk and the bread crumbs. Let it swell for 5 minutes.

2. Combine the ground beef, onions and beets.

3. Add the bread crumb mixture, the egg yolk, and the HP sauce. Combine well.

4. Shape the mixture into small hamburger patties. Put aside.

5. Chop the parsley and set aside.

6. Fry the potatoes in a pan until golden brown and soft. Keep warm in the oven.

7. Melt the 3 tablespoons of butter. Add the beef patties.

8. Meanwhile, melt the 6 tablespoons of butter and let the butter brown.

9. Fry the patties until cooked through.

10. Fry the eggs to your liking, 1 per person.

11. Serve the patties with an egg on top, the fried potatoes and top with the browned butter and parsley.

Potato and Shrimp Quiche

Potato and Shrimp Quiche (Potatis och räk paj)

 

Once again those left over potatoes come in handy! This dish is very good served the next day for lunch as well. I served it with a nice green salad. Enjoy!

Ingredients

  • 1 pie shell crust
  • 6 boiled baby potatoes
  • 1 leek
  • 1/4 pound of cooked shrimp
  • 3 eggs
  • 1 1/2 cup of milk
  • Salt and pepper
  • 1 cup of shredded cheese

Instructions

1. Prick the thawed crust with a fork. Bake at 400 degrees F for about 10 minutes until lightly browned.

2. Cut the potatoes in half.

3. Cut off the tails on the shrimp.

4. Slice and rinse the white parts of the leek.

5. Whist the eggs, milk, salt and pepper.

6. Cook the leek until soft.

7. Fill the pie shell with potatoes, shrimp, leek and egg mixture. Top with the shredded cheese.

8. Bake until you have a nice golden crust, about 30-40 minutes. Make sure the eggs are cooked through.

Salmon and Potato Patties

Salmon with Potato Patties (Lax med potatis pannkaka)

 

I had some leftover mashed potatoes the other day and decided to make potato patties with them. I served this with baked salmon, garlic dip and a good beet salad. Very good!

Ingredients

  • 1 lb of salmon
  • Leftover mashed potatoes
  • 1 jalapeno, sliced
  • 2 tablespoons of chopped up dill
  • 1 egg
  • 1 cup breadcrumbs
  • Lemon pepper, salt and pepper
  • Veggie oil
  • 1 cup of sour-cream
  • 1 garlic clove

Instructions

1. Combine the mashed potatoes, jalapeno, dill and egg.

3. Roll into balls and flatten with your hand.

4. Dipp in breadcrumbs and cover both sides. Shake off the excess.

5. Season the salmon with the lemon pepper and bake at 400 degrees F for about 15-20 minutes.

6. Make the dip by combining sour-cream, minced garlic and pepper.

Sausage and Mashed Potatoes

Sausage with Mashed Potatoes (Korv med mos)

 

A classic! In Sweden you can by this in your local kiosk, a small open-fronted hut or cubicle from which newspapers, refreshments, tickets, etc., are sold. This is a quick dinner loved by the whole family!

Ingredients

  • Your favorite sausage
  • 8 medium potatoes
  • 1/2 cup of milk
  • 1 stick of butter
  • 1 yellow onion
  • Salt and pepper
  • Mustard
  • Ketchup

Instructions

1. Boil the poatoes until tender.

2. Slice the onion thinly and fry until very soft.

3. Drain the potatoes and add the milk and butter. Mash until soft and creamy. Season with salt and pepper. Keep warm in the oven while cooking the sausage.

Fried Cod

Fried Cod with Egg Salad (Torsk med äggsallad)

 

Mmmmm, very tasty! You can use any white fish for this recipe, and instead of roasting the potatoes you can just boil them. An easy and fairly quick, yet fancier recipe perfect for a weekend night. Enjoy!

Ingredients

  • 2 cod fillets
  • 4 boiled and chopped eggs
  • 1 cup cooked and chopped up shrimp
  • Dill
  • 1 stick of butter
  • Paprika
  • Salt and pepper
  • 1/2 pound of potatoes
  • Horseradish

Instructions

1. Boil the potatoes for about 12 minutes.

2. Mix shrimp and eggs.

3. Mix in a few tablespoons of horseradish and dill.

4. Drain the potatoes and place in an oven safe dish along with some veggie oil and salt and pepper. Roast for about 20 minutes at 425 degrees F.

5. Shape the egg salad into small rounds and place on plates.

Potato Pancake

Potato Pancake (Raggmunk)

 

I haven’t had these pancakes since I was a kid, but they sure are tasty! And very easy to make. If you don’t want to shred the potatoes yourself, you can buy frozen hash-browns and defrost them. Enjoy!

Ingredients

  • 1 1/2 pounds of potatoes
  • 1 cup of flour
  • 1/2 teaspoon of baking powder
  • Salt and pepper to taste
  • 1 1/2 cups of milk
  • 3 tablespoons onions, grated
  • 2 eggs
  • Lingonberry jam (can be found at Scandinavian Specialty stores)

Instructions

1. Peel, rinse and grate the potatoes into a bowl of very cold water.

2. Whisk together flour, baking powder, salt, pepper and one cup of the milk to make a smooth batter.

3. Add the grated onion, eggs and remaining milk. Whisk until combined.

4. Drain the potato shreds in a wire mesh strainer or colander and using your hands, press as much moisture out as possible. Cover with a paper towel and set aside.

5. Stir the potato shreds into the batter.

6. Heat griddle or large frying pan to about 350°F and rub the griddle with a thin coat of oil. When the oil is hot, pour 1/4 cupfuls of batter onto the griddle and cook until golden on the bottom. Then flip the pancakes.

8. Serve the potato pancakes with the bacon and lingonberry jam.

Swedish Meatballs with Cream Sauce

Swedish Meatballs with Creamy Sauce (Köttbullar med gräddsås)

 

Probably the most famous of all Swedish dishes and a big hit with the whole family! I like serving it with mashed potatoes, lingonberry jam and cucumber salad. Enjoy!

Ingredients for the Meatballs

  • A bunch of mixed fresh herbs, such as rosemary, thyme and oregano, finely chopped
  • 1lb ground pork
  • 1lb ground beef
  • 2 eggs
  • 3/4 cup of milk
  • 5-6 ounces of dried breadcrumbs
  • 1 teaspoon ground allspice
  • Salt and freshly ground black pepper

Instructions for the Meatballs

1. Put the herbs along with the pork, beef, eggs, milk, breadcrumbs, and spices in a big bowl.

2. Mix it all well with your hands and roll into small balls. Place on a greased baking sheet. Let them get a bit firmer by placing them in the fridge for about an hour.

3. Remove from fridge and fry in a pan until golden brown.

Ingredients for the Creamy Sauce

  • 2 cups beef stock
  • 2 cups heavy cream
  • 6 tablespoons of flour
  • 2 teaspoon of soy sauce
  • Ground black pepper and dried rosemary

Instructions for the Creamy Sauce

1. Whisk beef stock, heavy cream, flour, soy sauce, black pepper, and rosemary in a large saucepan until smooth.

Sailors Beef

Sailor’s Beef (Sjömansbiff)

 

This amazing beef stew is made with beer, beef, yellow onions and potatoes. The whole thing is very tasty, and perfect for a cold Winter’s night. Serve with cucumber salad.

Ingredients

  • 2 1/2 yellow onions
  • 3 tablespoons butter
  • 1 pound of beef steak
  • 1/3 cup flour
  • 2 tablespoons butter
  • 2 pounds potatoes
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 1/2 cups of beef bullion
  • 1 1/2 cups dark beer

Instructions

1. Chop the onion and fry in a pan with 3 tablespoons of butter until golden in color. Put aside.

2. Cut the meat in pieces about ½-inch thick. Then pound to get it a bit tender.

3. Mix, flour, salt, and pepper in a bowl and add the meat. Mix evenly.

4. Fry the meat on both sides in a hot pan with 2 tablespoons butter. About ½ a minute on each side.

5. Peel the potatoes and cut them in thin slices.

6. Mix potato, fried onion, meat, bay leaves and thyme in a pot. Potatoes should be at the bottom and the top.

7. Mix the beef bullion and beer and then pour over the potato mix. Cover with a lid and simmer for about an hour. And here it is!
