Apple Cumble

Apple Crumble (Äppelpaj)

 

Nothing says Summer quite as much as fresh apple crumble! Serve with whipped cream, ice cream or vanilla sauce!

Ingredients

  • 1 1/2 pounds of apples
  • 1 teaspoon cinnamon
  • 2 teaspoons of sugar
  • A bit of salt
  • Butter for the pie dish
  • 1 stick of butter
  • 1 cup of flour
  • 1/2 cup of oatmeal
  • 3/4 cup of sugar

Instructions

1. Butter a pie dish. Pre-heat oven to 400 degrees F.

2. Add the cinnamon, salt and 2 teaspoons of sugar to the dish.


3. Peel, core and slice the apples.

4. Toss the apples with the sugar and cinnamon until totally coated.

5. Combine the butter, flour, oatmeal and sugar and work the dough until you have lumps.

6. Crumble the lumps over the apples and bake in the oven for about 30 minutes.

7. Remove from oven and let the crumble cool for a bit. The serve with your favorite topping.

Peach Jam

Peach Jam (Persika sylt)

 

Fresh peaches makes the perfect jam! Serve with Swedish pancakes, waffles, scones or toast. Enjoy!

Ingredients

  • 5-6 pounds of peaches
  • 3 teaspoons of fresh lemon juice
  • 5 cups of white sugar
  • Enough jars and lids

Instructions

1. Wash your peaches. Score an X at the top of each peach.

2. Place in boiling water for about 1 minute.

3. Prepare an ice bath and place the peaches in there for about 1 minute.

4. Take out of the ice bath and peel with a paring knife. The skin comes off so easy! Repeat with the remaining peaches.

5. Place the peaches, lemon juice and sugar in a big bowl let sit for an hour.

6. Once it looks like this, transfer to a large pot.

7. Bring to a boil and let it boil for about 20-30 minutes.

8. Once the jam looks more like jelly remove from the heat and carefully pour the jam into clean jars.

9. Go ahead and boil the lids for at least 10 minutes.

10. Remove from the boiling water and put onto the jars. Tighten as hard as you can. Then boil for at aleast 10 minutes making sure the whole jars are covered by the water.

11. Remove carefully and let the jars cool down. After a few hours go ahead and do the lid test – the lids should stay in one place, not pop. If they do, try replacing the lid and boil again.

Crab Pizza

Crab Pizza (Pizza med Krabba)

 

Yum! Crab on a pizza! And avocado! Yes, it’s a fantastic combo! Just make sure the crab meat is fresh.

Ingredients

  • 1 pre-made pizza dough
  • Some flour
  • Oil
  • 2 pieces of sliced garlic
  • 3 fresh crab legs
  • 1/4 sliced red onion
  • 1 avocado
  • 1 cup shredded mozzarella
  • Mozzarella log
  • Red pepper flakes

Instructions

1. Use whatever force you might have to get the crab meat out of the legs.

2. Slice the redonion, the garlic and the mozzarella.

3. Roll out the pizza dough with some of the flour and place on a big baking sheet. Bake at 400 degrees F for about 10 minutes.

4. Slice the avocado.

5. Brush the pizza with a little bit of oil. Sprinkle the shredded mozzarella and the sliced garlic over the pizza.

6. Add the red onion.

7. Add the crab meat and the avocado.

8. Top with the sliced mozzarella.

9. Bake in the oven for a bout 10 minutes until the cheese is somewhat browned.

10. Slice and serve with your favorite vegetables.

Peach Cobbler

Peach Cobbler (Persikor med havretäcke)

 

The kids and I recently went and picked peaches at the grandparent’s and I decided to make a cobbler with some of them. Turned out really good! You can serve it with either ice cream or whipped cream.

Ingredients

  • 4 cups of sliced or chopped peaches (no skin)
  • 1/2 cup of flour
  • 1/2 cup of cold butter
  • 1 teaspoon of ground cinnamon
  • 1/2 cup of brown sugar
  • 1 cup of rolled oats
  • Our favorite ice cream

Instructions

1. Start by scoring the tip of the peach with and X. Bring a big pot of water to a boil.

2. Add a few peaches at the time and boil for about a minute. Remove with a slotted spoon.

3. Prep an ice bath for the peaches and put them in there right after boiling. Let them sit for a minute.

4. Peel the skin with a pairing knife. Repeat the remaining peaches.

5. Slice or chop the peaches until you have 4 cups.

6. Pre heat the oven to 360 degrees F. Fill the bottom of a 8×8 oven safe pan.

7. Mix the flour, brown sugar, butter, cinnamon, and salt in a separate bowl.

8. Add the rolled oats and mix well.

9. Spread evenly over the peaches.

10. Bake in the middle of the oven until bubbly and the surface is browned, about 30 minutes. Remove and let cool for 15 or so.

11. Serve with your favorite ice cream!

Salmon Skewers

Salmon Skewers (Lax grillspett)

 

Grilled salmon is the prefect summer dish! Easy to make and can be served with several different vegetables or salads. Enjoy!

Ingredients

  • 1/2 pound salmon fillet or steaks
  • Fresh rosemary
  • Oil for fish, potatoes and dressing
  • Black pepper
  • 1/2 pound baby potatoes
  • Salt
  • 1/2 cup of parsley
  • 1 lemon
  • 1 cup plain yogurt
  • Your favorite herbs

Instructions

1. Mix a few tablespoons of oil with the chopped rosemary and black pepper.

2. Cut the salmon into bite sized cubes.

3. Marinate the salmon in the oil mixture for about 30 minutes.

4. Pre heat oven to 420 F degrees. Wash the potatoes and place in an oven safe dish. Sprinkle with oil and salt. Bake in the oven until tender, about 25-30 minutes.

5. Meanwhile, mix the yogurt with the chopped parsley and the juice and peel skin from the lemon. Once potatoes are done, sprinkle the mixture over.

6. Make the yogurt dressing by combing yogurt and your favorite chopped up herbs.

7. Thread the salmon onto the skewers.

8. Grill on medium high for a few minutes on each side.

9. Serve with the potatoes, dressing and a good vegetable.

White Chocolate Cake with Rhubarb

White Chocolate Cake with Rhubarb (Rabarber kladd kaka)

 

This was my first time making this cake and it was a big hit with everyone. Yay!

Ingredients

  • 1 1/2 cups of white chocolate
  • 2 sticks of butter
  • 2 cup of white sugar
  • 4 eggs
  • 3 teaspoons of vanilla syrup
  • 2 1/2 cups of flour
  • 2 sticks of rhubarb

Instructions

1. Slice the rhubarb into sticks.

2. Butter a spring form baking dish and put aside.

3. Melt the butter and add the chocolate. Stir until combined.

4. In big bowl, whisk the eggs, sugar, vanilla syrup until combined. Add the chocolate mixture. Finally add the flour and stir until combined.

5. Pour the batter into the spring form.

6. Place the rhurbarb slices on the cake.

7. Bake at 390 degrees F for about 35 minutes until golden brown.

8. Let it chill for a bit before serving with ice cream or whipped cream.

Skagen Toast

Skagen Toast (Skagen macka)

 

Classic open faced sandwich! Very easy and quick to make. You can even turn it into appetizers by cutting up the toast into smaller bite size pieces. Always a hit!

Ingredients

  • 1lb cooked and peeled small shrimp
  • 1/2 red onion, peeled and very finely chopped
  • A small bunch of fresh dill, very finely chopped. Plus extra for garnish
  • 3 tablespoons olive oil
  • Zest and juice of 1/2 lemon
  • 4 tablespoons sour cream
  • Salt and pepper
  • A loaf of soft, white bread
  • Some butter

Instructions

1. Zest the lemon and juice it.

2. Put the shrimp, sour cream, dill, and onion in a large bowl.

3. Add the lemon juice and salt and pepper to your liking.

4. Toast the bread in butter until golden. Add some pepper for extra flavor.

5. Divide the shrimp mixture on the toasts and top with sprigs of dill.

Mango Cheesecake

Apple Mango Crisp (Äpple och mango paj)

 

For some extra flavor try adding mangos to a basic apple crisp. I served this with vanilla sauce that I got at a specialty store here in Seattle, but some vanilla ice cream or whipped cream will be just as tasty!

Ingredients

  • 1 1/2 cups of rolled oats
  • 1/2 cup flour
  • 1/2 cup brown sugar, packed
  • 2 teaspoons cinnamon
  • 1/4 cup of melted butter
  • 3 green apples, cored and chopped coarsely
  • 3 red apples, cored and chopped coarsely
  • 3 tablespoons lime juice
  • 1/4 cup of flour
  • 4 cups mangoes, chopped coarsely (frozen or fresh)

Instructions

1. Preheat oven to 375. Grease a 13×9 cake pan.

2. In a medium bowl, stir together rolled oats, flour, sugar, and cinnamon; stir in butter and distributing evenly. Set aside.

3. Place apples in large bowl, sprinkle with lime juice, then remaining flour; stir to mix, then fold in mango chunks.

4. Pour apple-mango mixture into prepared pan; top with oat-sugar mixture.

5. Bake (uncovered) for 30 minutes; turn pan around, bake another 10-15 minutes (apples should be tender throughout).

Smoked Porkchops

Smoked Pork Chops with Potato Salad (Stekt kassler med potatissallad)

 

Smoked pork chops are very common in Sweden, and very easy to cook and extremely tasty. For this recipe I decided to fry them up with a fresh potato salad. Very refreshing!

Ingredients

  • 2 cups of arugula
  • 10 leaves of basil
  • Half of an English cucumber
  • 10-20 Cherry tomatoes
  • 1/4 thinly sliced red onion
  • Oil
  • Salt and pepper
  • White wine vinegar
  • 1 pound of baby potatoes
  • 1 cup of sour cream
  • A couple of garlic cloves
  • One pack of Smoked pork chops

Instructions

1. Potato salad: Wash the potatoes. Cut in half and boil until tender.

2. Wash all the vegetables, chop up and place in a big salad bowl. Put aside.

3. Rinse the potatoes and let them cool slightly.

4. Fry the smoked pork chops until golden brown.

5. Add the potatoes to the big salad bowl and mix up. Make a salad dressing out of white wine vinegar, oil, salt and pepper. Mix in with the potato salad.

6. Make the side dip out of sour cream, a couple of minced garlic cloves, and black pepper.

Herb Crusted Salmon

Herb Crusted Salmon with Mango Salad (Lax med örter och mango sallad)

 

This salmon is so decadent! The mixed herbs on top and the sweet, tangy mango salad is the perfect combination. And it’s a very quick fix!

Ingredients

  • About 1 pound of salmon
  • 2 tablespoons of parsley
  • 2 tablespoons of thyme
  • 2 tablespoons of dill
  • Juice from 1/2 lemon
  • Oil
  • Butter
  • Salt and pepper
  • Arugula salad
  • 1 mango
  • Pineapple
  • Gorgonzola cheese
  • 1/4 of a red onion
  • 3 tablespoons of peanuts

Instructions

1. Chop the hearbs. Mix the herbs with the lemon juice.

2. Oil an oven safe dish and place the washed off salmon in it. Salt and pepper the salmon.

3. Spread the herb mixture on top the salmon. Slice up a few pieces of butter and place on top.

4. Bake in the oven at 400 degrees F for about 15-17 minutes, or until cooked.

5. Meanwhile, make the salad: place the arugula in a bowl. Add the sliced mango, red onion, gorgonzola, chopped peanuts, and pineapple tidbits on top. Sprinkle some oil when done and add some pepper for taste.
