Fried Cod with Egg Salad (Torsk med äggsallad)

 

Mmmmm, very tasty! You can use any white fish for this recipe, and instead of roasting the potatoes you can just boil them. An easy and fairly quick, yet fancier recipe perfect for a weekend night. Enjoy!

Ingredients

  • 2 cod fillets
  • 4 boiled and chopped eggs
  • 1 cup cooked and chopped up shrimp
  • Dill
  • 1 stick of butter
  • Paprika
  • Salt and pepper
  • 1/2 pound of potatoes
  • Horseradish

Instructions

1. Boil the potatoes for about 12 minutes.

2. Mix shrimp and eggs.

3. Mix in a few tablespoons of horseradish and dill.

4. Drain the potatoes and place in an oven safe dish along with some veggie oil and salt and pepper. Roast for about 20 minutes at 425 degrees F.

5. Shape the egg salad into small rounds and place on plates.

6. Season the cod with salt and pepper and fry until golden on each side.

7. Melt the butter until golden brown, almost burnt.

8. Serve the cod with potatoes, egg salad, a side veggie, and the melted butter.
