Peach Jam

Peach Jam (Persika sylt)

 

Fresh peaches makes the perfect jam! Serve with Swedish pancakes, waffles, scones or toast. Enjoy!

Ingredients

  • 5-6 pounds of peaches
  • 3 teaspoons of fresh lemon juice
  • 5 cups of white sugar
  • Enough jars and lids

Instructions

1. Wash your peaches. Score an X at the top of each peach.

2. Place in boiling water for about 1 minute.

3. Prepare an ice bath and place the peaches in there for about 1 minute.

4. Take out of the ice bath and peel with a paring knife. The skin comes off so easy! Repeat with the remaining peaches.

5. Place the peaches, lemon juice and sugar in a big bowl let sit for an hour.

6. Once it looks like this, transfer to a large pot.

7. Bring to a boil and let it boil for about 20-30 minutes.

8. Once the jam looks more like jelly remove from the heat and carefully pour the jam into clean jars.

9. Go ahead and boil the lids for at least 10 minutes.

10. Remove from the boiling water and put onto the jars. Tighten as hard as you can. Then boil for at aleast 10 minutes making sure the whole jars are covered by the water.

11. Remove carefully and let the jars cool down. After a few hours go ahead and do the lid test – the lids should stay in one place, not pop. If they do, try replacing the lid and boil again.
