Potato and Shrimp Quiche

Potato and Shrimp Quiche (Potatis och räk paj)

 

Once again those left over potatoes come in handy! This dish is very good served the next day for lunch as well. I served it with a nice green salad. Enjoy!

Ingredients

  • 1 pie shell crust
  • 6 boiled baby potatoes
  • 1 leek
  • 1/4 pound of cooked shrimp
  • 3 eggs
  • 1 1/2 cup of milk
  • Salt and pepper
  • 1 cup of shredded cheese

Instructions

1. Prick the thawed crust with a fork. Bake at 400 degrees F for about 10 minutes until lightly browned.

2. Cut the potatoes in half.

3. Cut off the tails on the shrimp.

4. Slice and rinse the white parts of the leek.

5. Whist the eggs, milk, salt and pepper.

6. Cook the leek until soft.

7. Fill the pie shell with potatoes, shrimp, leek and egg mixture. Top with the shredded cheese.

8. Bake until you have a nice golden crust, about 30-40 minutes. Make sure the eggs are cooked through.

9. Serve when it has cooled down a few minutes.
