Salmon Skewers

Salmon Skewers (Lax grillspett)

 

Grilled salmon is the prefect summer dish! Easy to make and can be served with several different vegetables or salads. Enjoy!

Ingredients

  • 1/2 pound salmon fillet or steaks
  • Fresh rosemary
  • Oil for fish, potatoes and dressing
  • Black pepper
  • 1/2 pound baby potatoes
  • Salt
  • 1/2 cup of parsley
  • 1 lemon
  • 1 cup plain yogurt
  • Your favorite herbs

Instructions

1. Mix a few tablespoons of oil with the chopped rosemary and black pepper.

2. Cut the salmon into bite sized cubes.

3. Marinate the salmon in the oil mixture for about 30 minutes.

4. Pre heat oven to 420 F degrees. Wash the potatoes and place in an oven safe dish. Sprinkle with oil and salt. Bake in the oven until tender, about 25-30 minutes.

5. Meanwhile, mix the yogurt with the chopped parsley and the juice and peel skin from the lemon. Once potatoes are done, sprinkle the mixture over.

6. Make the yogurt dressing by combing yogurt and your favorite chopped up herbs.

7. Thread the salmon onto the skewers.

8. Grill on medium high for a few minutes on each side.

9. Serve with the potatoes, dressing and a good vegetable.
