The Swedish cheesecake is a bit different than the American kind, using cottage cheese and ricotta instead. This should be served lukewarm with your favorite jam and whipped cream. So, so good!
- 2 pounds cottage cheese, strained
- 1 pound ricotta cheese
- 8 large eggs
- 1/2 cups granulated sugar
- 1/2 cups flour
- 1 cup almond meal
- 2 splashes of Amaretto
- Your favorite jam and whipped cream
1. Strain the cottage cheese until until the curds seem a bit denser.
