Swedish Cheesecake (Ostkaka)


The Swedish cheesecake is a bit different than the American kind, using cottage cheese and ricotta instead. This should be served lukewarm with your favorite jam and whipped cream. So, so good!


  • 2 pounds cottage cheese, strained
  • 1 pound ricotta cheese
  • 8 large eggs
  • 1/2 cups granulated sugar
  • 1/2 cups flour
  • 1 cup almond meal
  • 2 splashes of Amaretto
  • Your favorite jam and whipped cream


1. Strain the cottage cheese until until the curds seem a bit denser.

2. Whisk the eggs until fluffy.

3. Mix the cheeses, eggs, sugar, flour, almond meal and Amaretto.

4. Pour into a greased 9×13″ pan. And bake at 400 degrees F for 20-30 minutes.

5. Serve with your favorite jam and whipped cream!
